Yankee Halloween Presents

HALLOWEEN PUMPKIN WALNUT COFFIN LIDS (BARS) RECIPE

2 cups all purpose flour
2 cups sugar
1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 15-ounce can solid pack pumpkin (Check contents)
4 large fresh eggs (Check Date)
1/2 cup vegetable oil
1/4 cup applesauce
1 cup walnuts, chopped
6 ounces fresh cream cheese, room temperature (Check Date)
1 cup powdered sugar
1/3 cup butter, room temperature

1. Open your oven door and check inside for Ghosts or Goblins...! When your hands stop shaking...
   
   
2. Then preheat your oven to 350°F. Grease a clean 15 1/2 x 10 1/2 x 1 inch baking sheet.
   
   
3. Stir first 8 ingredients in large bowl to blend. Add pumpkin, eggs, applesauce and oil and beat until blended. Mix in chopped walnuts.
   
   
4. Spread batter in prepared pan. Bake until tester, inserted into center, comes out clean, about 25 minutes. Cool in pan on wire rack.
   
   
5. COFFIN LID FROSTING: Beat fresh cream cheese, powdered sugar and room temperature butter in medium bowl to blend together.
   
   
6. Spread frosting over cake in thin layer. (Can be prepared 1 day ahead. Refrigerate until cold, then cover and keep refrigerated.)
   
   
7. Cut cake into bars and serve these delicious Halloween pumpkin walnut bars, that are guaranteed to keep family werewolves howling, and Halloween ghosts gobbling until the stroke of Midnight...!!!.

Makes 24 delicious Halloween pumpkin walnut coffin bars (lids).
