1 cup canned solid-pack pumpkin (Check Contents) or homemade from your garden pumpkin patch
Do not go into your Pumpkin Patch on Halloween Night...!!! Only if you dare...!!!
1 cup white sugar
1/4 cup water
2 large fresh eggs (Check Date)
1/4 cup vegetable oil
2 cups all-purpose flour
2 teaspoons baking powder (Check Date)
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 cup fresh picked or frozen cranberries, cut in half.
Open your oven door and check inside for Ghosts or Goblins...! When your hands stop shaking...
Preheat your oven to 325° F. and then butter a loaf pan, 8 1/2 by 4 1/2 by 2 3/4 inches.
In a large mixing bowl, beat together pumpkin, sugar, water, eggs, and oil. Sift in flour, baking powder, salt, baking soda, and spices and stir just until batter is smooth. Stir in cranberries and spoon batter into loaf pan, spreading evenly.
Bake bread in middle rack of oven, 1 hour and 15 minutes, or until a tester comes out clean. Cool in pan on a wire rack 10 minutes. Turn bread out onto the wire rack and cool completely. Bread may be made 4 days ahead and chilled, covered.
This recipe is a delicious Halloween muffin and holiday bread treat. Great for Thanksgiving Day.
Makes 12 large muffins or a loaf of delicious tasting bread for the howling werewolves, ghosts and goblins.
